This time, we would like to introduce “Kotori,” a store in Shibetsu City that serves delicious bread and coffee.

The bread is just delicious. The bread is naturally fermented, and it takes 10 days from the time it is prepared to the time it is baked.
You can eat it at the store, but there are also quite a few customers who just buy the bread and go home.
The shop opens at 10:00 a.m., but there are often times when I go there around 1:00 p.m. and the bread is almost sold out.

The store is run by a couple. The wife does the baking and the husband makes the coffee.
The beans are ground each time an order is placed, and the coffee is made using a siphon over a long period of time.
The deep flavor of the coffee is perfect for a relaxing cup of coffee in the store.
In addition, you can enjoy soup, quiche, and other light meals at the restaurant.

The couple is not from the area, but have lived here for a long time due to the husband’s transfer to this area, where he has reached retirement age.
The wife started baking here, having previously assisted in a bakery.
They use local flour, sugar, and no additives other than ingredients.
Both the bread and coffee are good enough to compete even if taken directly to Tokyo.
But it has a good appearance like a hideout in the hills on the east side of Shibetsu City.
